This was good but I mixed in mayo and put it in the fridge for a salad as leftovers.
What you need:
- I salmon filet or 1 can of Bumble Bee canned salmon
- 2 Roma Tomatoes (plum tomatoes) diced
- 2 green onions sliced
- 3 tbs capers with juice
- 1/4 box of penne pasta
- 1 tbs butter
- 1 tbs extra virgin olive oil
Boil the pasta. While it cooks cut up the veggies
Add the butter and olive oil to the pot the add 2 diced tomatoes, 1 green onion, and chopped capers let sauté.
Add the salmon and drain the pasta.
Add the pasta and toss.
Add a sprinkle of green onion on top and you’re ready for dinner.
