Taquitos, Baked

I made these taquitos for my husband and myself.  I ended up with 11.  He ate 4 for dinner, I had 2 and there was enough left over for him to take 3 to work and I had one for lunch the next day.  Dips were sour cream, homemade guacamole, and salsa.  So trust me it makes a lot, I still have one left in the fridge.

Ingredients:

  • choice of meat.  I chose 2 chicken breasts.  You can use shredded beef or ground beef
  • 1 8oz pack of shredded cheese.  I used taco flavored
  • 1 can of Rotel, Chipotle flavor
  • half of a diced onion I used a red onion
  • 1 packet of taco seasoning
  • a few ounces of chicken broth
  • 8-inch flour tortillas

These only need to bake for about 15 minutes.

First, cook the chicken and shred it.  Dice the onion and add it to the chicken.  Pour in a can of Rotel.  Add a little chicken broth to the can and swish around and pour it in the pot.  Then add a splash of olive oil and stir.

Lay out your flour tortillas and put a thick line of cheese (As much as you can stand) in the middle.  Now add the chicken and more cheese like below.

Next, fold the tortilla in half

Now, roll the middle to the end, yes both layers.  Brush your parchment paper with olive oil and place the tortillas on the baking sheet and brush the tops with olive oil as well.

Bake 425 for 15 minutes

If you have any left over this is my suggestion.  I cut a taquito in half and pour tomato sauce over it, then cover it with mozzarella cheese.  Picture below.  ENJOY!!!!
