I don’t like plain salmon, I mean, salmon is good, but I like a lot of flavor with it. These toppings are awesome together! I thought of several toppings and if the flavors would mesh well and boy was I right. All you need is
- 2 cuts of salmon, skinned, the total weight was one pound.
- Extra virgin olive oil
- Italian seasoning
- 3 green onions chopped
- 1 diced Roma tomato (Roma or Plum tomatoes are meatier, others are mainly seeds and juice
- 3 tbs of chopped capers with 1 tbs of juice
Pour extra virgin olive oil in a deep plate and lay the fish in it. Pour a little olive oil over the fish and sprinkle with Italian seasoning. Turn the fish filet over and sprinkle with Italian seasoning again. Place the fish in a pan of extra virgin olive oil on high heat. When you see it’s very hot, lay the filets in the pan and put a lid over it. Watch it carefully. When it has cooked halfway through turn the filets over. Inbetween the filets and on the sides, start adding the toppings. I add the capers first. Make sure there is still olive oil in the pan so it can sautee. Then add the tomatoes and move these toppings around as much as you can. The salmon will soak up these wonderful flavorings of the toppings and juice as they are cooking. Then add the green onion. The green onion is very mild, it will add a nice spring flavor so let it sautee but don’t let it cook down. When the salmon is done, remove the filets and add the toppings to the filets and enjoy. You won’t even need salt and pepper. You could even shred the salmon and toppings and mix with penne pasts. Yes, thank you, I believe I will… stay tuned!!
